Tagliatelle with zucchini, shrimps and green chillis

I have just recently started making my own pasta.

I don´t like the fresh pasta you can get in supermarkets and I actually don´t think it tastes any better then the ones I buy dried. So why bother?

It is very easy to make pasta – even without a pasta machine.
Perhaps it would be even easier with a pasta machine, especially the cutting part – put who cares if the tagliatelle isn´t all the same size? I think it looks even better and more rustic just cut by hand.

I am not going to give you my recipe for fresh pasta.
I am going to keep it a secret for now anyway.
What I can tell you, that it is simply the best pasta I have ever tried….

Here is the recipe for the sauce.
It is quick, easy and very tasty…

1 zucchini
1 orange bell pepper
600 gr shrimps

2 green chillis – finely chopped
3 – 4 cloves garlic – finely chopped

olive oil
maldon salt

100 ml cream
50 ml white wine

Cut the zucchini and put it in a colander with a bit of maldon salt.
Let it sit there for about an hour to get some of the water and bitterness out of it.
Dry it with a paper towel and fry it in olive oil till it is soft and tender and has a bit of color.
Add the orange bell pepper ( cut in strips ) to the pan, and when it has begun to soften a little bit add the chillis, garlic and shrimps.

Add the white wine and let it evaporate a bit, then add the cream.

Let the whole thing come quickly to the boil and voila… Throw the freshly boiled pasta in.

Served with grated parmesan of course.
