Apple cake to die for…
This one turned out really well…
It was great served warm with whipped cream.
I often add a little powdered sugar to the cream when I whip it as well as some vanilla.
It makes the cream so much better….
100 gr butter
150 gr sugar
2 vanilla beans
130 gr almond flour
70 gr flour
1 tsp baking powder
7 – 8 green apples
70 – 80 gr demerara sugar
40 – 50 gr butter
Cream the butter and sugar together ( the 100 gr of butter and 150 gr sugar that is ) with the vanilla.
If you don´t have vanilla beans, you could add a teaspoon or so of vanilla essence.
Add the eggs – one at a time.
Mix the almond flour, flour and baking powder in a separate bowl.
Fold it into the butter mixture.
Core and peel the apples and cut them in wedges.
Grease an ovenproof dish with butter, before arranging the apples.
Cut the butter ( the 40 – 50 gr ) into small pieces and mix it with the apples.
Sprinkle about half the demerara sugar on the apples.
Now for the dough – using either a piping bag or whatever way you want – distribute the dough evenly over the apples. Sprinkle the rest of the demerara on top.
I had it in the oven for about 50 minutes.
First I had it on 150, before putting the heat to 180 for the last 15 minutes or so.
It was amazing – actually, I´m making a similar one now.
This time using bananas…..can´t wait for the results;)
It´s not completely the same – didn´t have any demerara left, but I did find some marzipan….
